Use the newest version your site supports. Small jumps (for example 8.3 → 8.5) are usually easier than large ones (for example 7.4 → 8.2). We do not change your selected PHP version for you. If a site is set to PHP 7.4, it stays on 7.4 until you change it, this is to avoid surprise downtime.
